200g soba noodles π
3 tbsp peanut butter π₯ (creamy or chunky)
2 tbsp soy sauce π₯’
1 tbsp rice vinegar (or lime juice π)
1 tbsp sesame oil π±
1-2 tsp chili garlic sauce πΆ (adjust to heat preference)
1 tsp honey π― or maple syrup π (optional)
1 garlic clove π§, minced
1 tsp fresh grated ginger (optional)
2-3 tbsp warm water π§ (to thin sauce)

Shallots π§ , thinly sliced
Veggies of choice π₯π₯πΆπ₯ β I used cucumber, carrots, bell peppers, and avocado for color and texture

- Cook the soba noodles: Boil noodles according to package instructions (usually 4-5 minutes). Drain and rinse under cold water βοΈ to stop cooking and cool.

2. Make the peanut sauce: Whisk together peanut butter π₯, soy sauce π₯’, rice vinegar π, sesame oil π±, chili garlic sauce πΆ, honey π―, garlic π§, and ginger. Add warm water π§ little by little until smooth and pourable.

3. Combine: Add the cooked soba noodles π and your choice of veggies π₯π₯πΆπ₯ to a large bowl. Pour over the peanut sauce π₯ and toss everything together until well coated.

4. Add fresh toppings: Mix in fresh red chilies πΆ, sliced shallots π§ . Garnish with cilantro πΏ, toasted sesame seeds βͺ, and your choice of nuts π° or roasted sunflower seeds π» for crunch.
