🛒 Ingredients
200g soba noodles 🍜
3 tbsp peanut butter 🥜 (creamy or chunky)
2 tbsp soy sauce 🥢
1 tbsp rice vinegar (or lime juice 🍋)
1 tbsp sesame oil 🌱
1-2 tsp chili garlic sauce 🌶 (adjust to heat preference)
1 tsp honey 🍯 or maple syrup 🍁 (optional)
1 garlic clove 🧄, minced
1 tsp fresh grated ginger (optional)
2-3 tbsp warm water 💧 (to thin sauce)

Shallots 🧅, thinly sliced
Veggies of choice 🥕🥒🌶🥑 — I used cucumber, carrots, bell peppers, and avocado for color and texture

👩🍳 Instructions
- Cook the soba noodles: Boil noodles according to package instructions (usually 4-5 minutes). Drain and rinse under cold water ❄️ to stop cooking and cool.
2. Make the peanut sauce: Whisk together peanut butter 🥜, soy sauce 🥢, rice vinegar 🍋, sesame oil 🌱, chili garlic sauce 🌶, honey 🍯, garlic 🧄, and ginger. Add warm water 💧 little by little until smooth and pourable.
3. Combine: Add the cooked soba noodles 🍜 and your choice of veggies 🥒🥕🌶🥑 to a large bowl. Pour over the peanut sauce 🥜 and toss everything together until well coated.
4. Add fresh toppings: Mix in fresh red chilies 🌶, sliced shallots 🧅. Garnish with cilantro 🌿, toasted sesame seeds ⚪, and your choice of nuts 🌰 or roasted sunflower seeds 🌻 for crunch.
