World's best watermelon salad
This watermelon salad is something I discovered on a weekly magasine in Austria few yers ago and this recipe has stayed with me since then. I have not passed a summer without making this salad since I found out about it.
Why you should try this watermelon salad?
If you are tired of eating the same green leafy salad each time because you are out of ideas, this watermelon mozerella salad is a must-try. This colorful watermelon salad is so refreshing for hot summer days. And it is very easy to make without having to gather lots of ingredients.
Ingredients :
- About half cut medium size watermelon or about 4 cups of watermelon cubes.
- A handful of cherry tomatoes (optional)
- About a cup of mozerella cubes or balls , which is approximately 250 grams.
- Half a cup of basil leaves
- 3 tablespoons ofolive oil
- 2 tablespoons of balsamic vinegar
- Salt and pepper
Instructions :
In a large bowl, combine the watermelon cubes, tomatoes and mozzarella cheese cubes.
Add the basil leaves to the bowl. I like to use whole basil leaves, but they can also be torn or cut into smaller pieces if you like. I also like to add fresh mint leaves sometimes in addition to basil leaves.
Drizzle the extra virgin olive oil and balsamic vinegar over the salad.
Season with salt and pepper to taste. Be careful with the salt as the mozzarella can be salty.
Gently toss all the ingredients together until well combined.
Let the salad sit for a few minutes to allow the flavors to meld together.Serve the Watermelon Mozzarella Salad chilled. It can be enjoyed as a side dish or a light meal on its own.
