The Best Lime Madeleine Recipe
Madeleines are one of my favourite baking recipes. They are so easy to make and can be made with so many different flavors. This delightful french delight with a zesty twist is so soft and tasty that it might get you addicted. Considering that these are so quick to make, I usually bake my madeleines in batches and store them for days.
Ingredients:
- 4 large eggs
- 125 grams sugar
- 1 teaspoon baking powder
- Vanilla extract or vanilla sugar
- 130 grals all purpose flour
- Lime zest and juice of half a lime
- 125 grams melted butter

- Preheat the Oven: Preheat your oven to 350°F (175°C). Grease and flour a madeleine pan or use non-stick madeleine molds.
- Whisk Dry Ingredients: In a bowl, whisk together the flour, baking powder, and salt. Set aside.
Mix Wet Ingredients: In a separate bowl, whisk the eggs, lime juice and granulated sugar together until well combined and slightly frothy. Add the lime zest and mix again.
Combine Dry and Wet Ingredients: Gently fold the dry ingredient mixture into the wet mixture until just combined. Be careful not to overmix; you want to maintain the lightness of the batter.
Add Melted Butter: Gradually pour in the melted and cooled butter while gently folding the batter until the butter is fully incorporated.
Chill the Batter: Cover the bowl with plastic wrap and refrigerate the batter for at least 30 minutes. This chilling period helps the madeleines achieve their characteristic hump.
Fill the Madeleine Molds: Spoon a tablespoon of batter into each madeleine mold, filling it about 3/4 full.
Bake: Place the madeleine pan in the preheated oven and bake for approximately 10-12 minutes, or until the edges of the madeleines are golden brown and the centers spring back when lightly touched.
Cool: Remove the madeleines from the oven and let them cool in the pan for a few minutes. Then, gently remove them from the pan and place them on a wire rack to cool completely.
Dust with Powdered Sugar: Once the madeleines are completely cool, dust them with powdered sugar for an extra touch of sweetness.
Serve: Lime Madeleines are best enjoyed fresh, but you can store them in an airtight container for a couple of days.
