Welcome back to the blog, foodies!
If there is one dish that instantly transports me back to the bustling streets and cozy little cafes of Kathmandu, it is piping-hot, ultra-savory, and spicy Chicken Chili. Growing up in Kathmandu, this was the ultimate comfort food—served everywhere from tiny neighborhood eateries and street-side shacks to bustling hangout spots with friends. Now that I live far from home, making this dish fills my kitchen with the exact aromas of my childhood and brings a little piece of Kathmandu right back to my heart.
Today, we’re sharing how to make authentic, restaurant-quality Kathmandu-style chicken chili right at home!
🛒 Ingredients
The Star of the Show:
700g boneless, skinless chicken thighs, cut into bite-sized 1-inch pieces (Thighs stay wonderfully juicy, but breasts work great too!)
The Flavor-Packed Marinade:
1 tbsp soy sauce
1 tbsp ginger-garlic paste
1 tsp dark soy sauce (for that gorgeous rich color)
1 large egg
1 tbsp all-purpose flour (maida)
2 tbsp cornstarch
A pinch of salt and black pepper
Neutral oil for shallow or deep frying
The Classic Kathmandu Chili Sauce Mix (Pre-mixed in a bowl):
2 tbsp tomato ketchup (gives that iconic slight sweetness and body)
- 1 tbsp red chilli flakes or chilli powder
1.5 tbsp soy sauce
1 tsp red chili sauce or Schezwan sauce (optional, for an extra kick)
1 tsp white vinegar or apple cider vinegar
A pinch of sugar (to balance the flavors)
Aromatics and veggies:
2 tbsp neutral oil (for the wok)
3-4 cloves garlic, finely minced
1 tbsp fresh ginger, finely minced
2-3 green chilies, slit lengthwise (add more if you love the heat!)
1 large red or green bell pepper (capsicum), cut into bite-sized squares
1 large onion, diced into chunks with layers separated
- 1 firm tomato, cut into large dice or wedges (My personal preference!)
Slurry: 1 tsp cornstarch mixed with ¼ cup of water
Fresh spring onions (scallions), chopped, for garnishing
👩🍳 Step-by-Step Instructions
Step 1: Marinating and Frying the Chicken
Prep the chicken: Cut your chicken into bite-sized pieces and place them directly into a large bowl.
Add the marinade: Toss in the soy sauce, ginger-garlic paste, dark soy sauce, egg, salt, pepper, 1 tablespoon flour, and 2 tablespoons cornstarch.
Mix & Rest: Massage everything thoroughly into the chicken pieces so every single piece is evenly coated in the thick batter. Let it marinate for about 30 minutes to allow all those savory flavors to soak into the meat.
Fry until golden: Heat neutral oil in a heavy-duty pan or wok over medium-high heat. Fry the chicken pieces in small batches until they turn golden-brown, crispy on the outside, and cooked through (about 4–5 minutes per batch). Transfer them to a wire rack or paper towel-lined plate.
Step 2: Mix the Sauce & Prep for High-Heat Cooking
Pre-mix the chili sauce: In a small bowl or cup, combine the tomato ketchup, soy sauce, red chili sauce, chilli powder or chilli flakes, vinegar, and sugar. Give it a quick whisk and set it aside right next to your cooking station. (Pro tip: Pre-mixing the sauce keeps things stress-free when stir-frying over high heat!)
Step 3: Sautéing the Aromatics & Veggies
Heat the wok: In a clean wok or large skillet, heat 2 tablespoons of neutral oil over high heat until smoking hot (that authentic smoke flavor or wok hei is key!).
Aromatics first: Toss in the minced garlic, ginger, and slit green chilies. Stir-fry rapidly for about 15–20 seconds until fragrant, being careful not to burn the garlic.
Add the crunch & tomatoes: Add your diced onions and bell peppers (capsicum). Toss them on high heat for just 1 minute. Next, toss in the largely diced tomatoes right toward the end so they soften slightly and absorb the flavors while keeping their nice chunkiness! (This is optional but I like to add ground cumin and coriander for extra flavor.)
Step 4: Bringing It All Together
Add the crispy chicken: Add your freshly fried chicken chunks directly into the wok with the sautéed aromatics and vegetables, giving everything a quick toss over medium-high heat.
Glaze with the sauce: Pour your pre-mixed chili sauce and the cornstarch slurry directly over the chicken and veggies. Toss vigorously for 30–45 seconds as the sauce thickens and wraps every single piece of chicken in a gorgeous, shiny glaze.
Garnish & serve: Turn off the heat, finish with a generous handful of freshly chopped spring onions on top, and serve piping hot!
💡 Suggestions & Serving Ideas
Tossing Technique: I like tossing the crispy chicken into the wok before adding the sauce and slurry so it warms up with the veggies and catches all the aromatic juices first. However, you can also thicken the sauce first and toss the chicken in at the very end—both methods result in a mouthwatering, restaurant-quality coating!
The Tomato Secret: While traditional street vendors don’t always add fresh tomatoes, I love including largely diced tomatoes in my recipe! They add a delightful fresh juiciness and subtle tang that balances the rich, crispy fried chicken perfectly.
The Ultimate Pairing: Serve this alongside classic Nepali Jeera Rice (cumin-infused fried rice) or classic Chowmein for the ultimate nostalgic cafe-style meal combo.
