How to make a moist and tasty carrot cake?

There are many different ways to make a carrot cake and like many of us, I have tried many recipes as well. This recipe is a simple and minimalist carrot cake recipe that uses few ingredients that are easily available at our homes. 

 

Obviously, youo can choose to make a cream cheese frosting for this cake becasue I know, the classic original recipe calls for a cream cheese frosting. But I personally love a minimal sugar glazing for this cake, like for a banana bread. The recipe to my banana bread is here

 

As i have mentionned abouve, I like to use whatever is available at home. So I use dark chocolate cubes or walnuts for this cake, depending on what I have laying around at home when baking it. 

Ingredients:

  1. 3 eggs
  2. 250 grams sugar
  3. 1/2 tablespoon vanilla extract or 1-2 tablespoons vanilla sugar
  4. 100 ml vegetable oil 
  5. 3-4 tablespoons plain yogurt
  6. 250 grams all purpose flour
  7. 1 teaspoon ground cinnamon 
  8. 1/2 teaspoon grated ginger
  9. A pinch of salt
  10. 1 teaspoon baking powder
  11. 3-4 large grated carrots 
  12. Chocolate cubes or nuts(optional)

Instructions:

  1. Preheat your oven to 350°F (175°C). Grease and flour the cake pan or line it with parchment paper for easy removal. 

  2. In a large mixing bowl, whisk together the flour, sugar, baking powder, salt, cinnamon, and ginger until well combined.

  3. In another bowl, beat together the vegetable oil, eggs, and vanilla extract until well mixed.

  4. Gradually add the wet mixture to the dry ingredients and mix until just combined.

  5. Fold in the grated carrots, chopped nuts (if using), and raisins (if using) until evenly distributed in the batter.

  6. Pour the batter evenly in the prepared cake pan.

  7. Bake in the preheated oven for 40-45 minutes, or until a toothpick inserted into the center of the cakes comes out clean.

  8. Remove the cake from the oven and let it cool for about 10 minutes. Then, remove the cake from the pan and place it on a wire rack to cool completely.

  9. Once the cake is completely cooled down, prepare the sugar glaze. In a separate bowl, take a cup of icing sugar or confectioner’s sugar. On this, add gradually the liquid of choice (water, milk, liqueur of choice, etc.). Mix gradually while adding the liquid (one tablespoon at a time) till you obtain a thick glaze.

  10. Spread the glaze on the cake.

  11. You can decorate the cake with additional chopped nuts or grated carrots if desired.

  12. Slice and serve your delicious homemade carrot cake, and enjoy!
