Ingredients:
280g all-purpose flour
1 tsp baking powder (about 4g)
¼ tsp salt (about 1.5g)
120g unsalted butter, softened
150 g granulated sugar
1 large egg
30ml fresh lime juice (about 2 tbsp)
Zest of 2 limes
1 tsp vanilla extract (optional)
🍴 Instructions
Step 1: Preheat & Prep
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or a silicone baking mat.
Step 2: Infuse Sugar with Lime Zest & Add Egg
In a large mixing bowl, combine the sugar and lime zest. Use your fingertips to rub the zest into the sugar until it becomes fragrant and slightly moist.
Add the egg and beat until well combined.




Step 3: Add Remaining Wet Ingredients
Mix in the softened butter, lime juice, and vanilla extract. Beat until the mixture is smooth and creamy.




Step 5: Combine dry ingredients with wet ingredients
Gradually stir in the dry ingredients( flour, salt and baking powder) until a soft dough forms. Do not overmix.



Step 5: Chill the Dough
Cover and refrigerate the dough for 1 hour to allow flavors to develop and the dough to firm up.
Step 6: Shape, Coat & Bake
Scoop tablespoon-sized portions of chilled dough and roll into smooth balls.
Coat each dough ball first in caster sugar, then roll generously in icing sugar (powdered sugar) to cover completely. This double coating helps create the signature crinkle look as the cookies spread and crack during baking.
Place the coated dough balls on the prepared baking sheet, spacing them about 5 cm (2 inches) apart.
Bake for 10–12 minutes, or until the cookies have spread, crinkled on top, and the edges are lightly golden. The centers should still look slightly soft—don’t overbake.








Step 7: Cool & Glaze (Optional)
Let cookies cool on the tray for 5 minutes, then transfer to a wire rack.
Optional: Drizzle with lime glaze and sprinkle with extra lime zest for a tangy finish.
