Ingredients:

  1. 3-4 ripe (or I would say overripe) bananas. 3 large or 4 medium bananas. 
  2. 2 large eggs
  3. 150 grams sugar
  4. 1 tablespoon baking powder
  5. 110 grams vegetable oil
  6. 190 grams all purpose flour
  7. Chocolate chips or chocolate bar of choice. I like to buy dark chocolate with nuts and chopp it for the muffins.  
  8. Ground cinnamon or grated ginger (optional) 
  9. Vanilla extract or vanilla sugar (optional)

Instructions:

  1. Let’s start by gathering all the ingredients and mashing the bananas. I like to mash those ovveripe bananas on a flat surface like a plate.

2. Pour the mashed banana into a big bowl and break the eggs. Mix properly.

3. Add the sugar and oil. Mix together. Also add vanilla extract and cinnamon or ginger if you’re using them for this recipe.

4. Add in the flour and baking powder and mix. Then add the chocolate chips or the chopped chocolates. Any nuts can also be added for the extra crunchy taste. I like to add whatever I have in my pantry.

5. I am using a slightly bigger muffin pan for this bake. Therefore, I have 10 muffins although this recipe is for 12 muffins. 

After mixing everything together, pour the muffin mix into the muffin pan and bake them at 180 degrees celsius for about 25 minutes. Depending on the color of the muffin desired, you could bake them for upto 30 minutes.

6. Once they are baked, let your banana muffins cool down a little and enjoy them warm or cold.
