Quick And Easy Lemon Bread/Lemon Cake Recipe

I have tried many different ways to bake this lemon bread and this recipe is my favorite way to get a very moist and soft bread/cake. You could bake this bread any time of the year but if you are like me, who has their own favorite recipes to bake depending on the season, I would say the best season to enjoy this cake would definitely be spring. 

Ingredients:

  • About a tablespoon of lemon zest 
  • 3 eggs
  • 200 grams sugar
  • 100 grams butter
  • About 50ml of lemon juice (more or less according to your preference)
  • 220 grams flour
  • 2 tablespoons plain yogurt
  • 1 teaspoon baking powder
  • 1/2 teaspoon baking soda 
  • Vanilla extract or vanilla sugar (optional)

Instructions:

1.Preheat oven and prepare pan:

    • Preheat your oven to 350°F (175°C).
    • Grease a pan of your choice or line it with parchment paper.

2. Mix wet ingredients and dry ingredients

    • Mix lemon zest and sugar first with your hands rubbing them together.
    • Add eggs and mix vigorously to crerate a creamy texture.
    • Add butter and mix properly .
    • Then, add yogurt and lemon juice and mix. Add vanilla extract as well.

3. Mix the dry ingredients 

    • Mix flour, baking soda and baking powder in a separate bowl.
4. Mix the dry and wet ingredients together
    •  Add the dry ingredients to the wet ingredients little at a time to avoid any lumps of flour.

5. Pour into the pan and bake 

    • Pour the mix into your pan of choice.
    • Bake your lemon bread/ lemon cake for 45 minutes. This might vary depending on the shape and size of your baking pan, so keep an eye on your lemon bread. You can use a knife to check if your bread is ready starting from 40 minutes of baking time.

6. Topping of choice 

    • Topping of any kind can be used for this lemon bread. For example, a frosting of whipped cream would also be very good. I prefer having my lemon cake light, so I don’t use any cream on top.
    • I make a glaze using icing sugar, milk and  vanilla extract. I spread it all over the cake. And before serving, i like to spinkle a little icing sugar.

Variations:

Sometimes, depending on the seasons, I like to add pieces of fresh fruits to my lemon bread loaf! This helps me avoid too much of cream or sugar that is used for the drizzle.
