Quick And Easy Spaghetti With Zucchini
This is probably one of the easiest and quickest spaghetti recipes that I frequently make, both in summer and in winter When you don’t know what to do with a zucchini, this might be a perfect recipe to try!
Possible variations:
When it comes to making this quick and easy spaghetti with zicchini, there are so many possible variations. Obviously you have so many options when it comes to choosing your pasta. I love using spaghetti for this but I’ve already tried penne for example and it’s pretty good too. That is also the reason why I have an estimated time indicated for the prep time and cook time, because different pastas take different time to cook.
Talking about the zucchini, I like cutiing them into long ribbon- like pieces when I am using spaghetti. But it can be cut into any shape, depending on the pasta you are using.
Ingredients:
- One large onion, chopped
- 2-3 cloves of galric, minced
- Olive oil
- Salt and pepper
- Spaghetti (for this recipe I have used 60 grams per portion, use more or less according to your need)
- 1 medium size zucchini
- Parmesan cheese, grated
- Herbs of choice, oregano or basil
Insttructions:
- Start by boiling the water for your pasta and add a tablespoon or 2 of salt in it.
- Start cutting the zucchini, garlic and onions.
- Cook the pasta and 2 minutes before your pasta is cooked, on a medium heat start cooking your zucchini. Start by adding the olive oil, garlic and onion into the pan and after about 30 seconds, add the zucchini and start cooking them together on high heat.
- Add a little salt, pepper and oregano (optional, fresh or dried).
- Then add the pasta and stir everything together for about 30 seconds without removing from the heat. Add pasta water if needed. I like to remove the pasta just before its completely cooked, because I am going to cook it with zucchini for about 30 seconds more.
- Serve it right away and sprinkle the parmesan cheese over the spaghetti.
- Sprinkle little chilli flakes if you like!
